FLATTENED RICE DOSA/ PANCAKE

For Breakfast I am always on a look out for something tasty and quick. Here the other day I created this recipe quite by accident.

I was planning on doing poha, a breakfast dish made with flattened rice (a very commonly done dish here in the state where I live.)

When I went into the kitchen I saw that there were not enough poha (flattened rice) to make my breakfast, and so I thought of trying this dish which came out just perfect.. It is filling and tasty the flattened rice provide the required softness to the dosas.

Take a cup of flattened rice or poha wash them and let them soak (do not keep water just drain it out when you wash them that’s enough for them to get soaked)
Take a cup of sour curd; add ½ cup fine semolina or Rava to it. Let it stand for about 15 mins, grind the above poha to a fine paste and add to the semolina, curd mix.

Add finely grated ginger and green chilies to this above mixture.

Make a paste add a little water or buttermilk if the mixture is too thick.

Add salt and sugar to taste. (Sugar about 1 tsp.)
Add finely chopped coriander and curry leaves (opt).
On a hot griddle drizzle a little oil and spread this dosa or pancake in a circular motion.

Let it cook , turn and cook on the other side till light brown.

Serve hot with chutney of choice.

You can add grated carrots or cabbage to this mixture, you can even add cheese before serving.

Sorry that I have no picture for this recipe as I served them before I could click pictures , but I will try to take a picture when I make them the next time.
But this is how it would look

NICE PIC..

Yesterday my brother and son went to a cafe for lunch.. both of them love the same type of food and so the natural choice were sandwiches and coffee and so naturally these things are best eaten at a cafe.
If it was my husband who had accompanied them than they would have to go to a proper restaurant to eat a proper meal which would be roti, vege , rice and dal i.e a complete Indian meal ..
My husband would never have a sandwich for lunch For his a sandwich is something that is to be had  either as a breakfast or dinner dish.

My brother clicked this lovely pic of the chicken sandwich that he had , I love the green checkered table cloth that is used it gives a traditional feel to the whole plate. so I decided that I had to share it with you..
do you make a chicken roll .. If you do pls give me the recipe.
I will give you my version too.

CHICKEN ROLL (home-made)
cook chicken breast pieces with a little salt and pepper till tender.. dont over cook as they tend to get chewy.
Shred the chicken to fine pieces.
Mix in a little mayonnaise, pepper powder, garlic powder, a little curd and finely chopped green chillies.
spread it inside a buttered roll of bread..
You can even add finely chopped onions to this.. but thats optional .. some dont appreciate the smell of raw onions.
and thats it eat it plain or with a leaf of lettuce added to the sandwich.

LUNCH BOXES DONE...

Here I am putting up pictures of some of the lunch boxes that I made for my son .

                                            CHOCOLATE BROWNIES

I am doing this so that those moms ,who like me are always in a dilemma as to what to make for her child's lunch has some tips and ideas...
I normally pack 2 lunch boxes one which is wholesome for the longer break and one which is lighter to prepare and to eat for the short break...
chocolate brownies I make from scratch and is a great option for the shorter break as I make them with whole wheat flour and no butter but with oil and so consider them more nutritious than the normal counterpart.

                                                                  DHOKLA
Dhokla is normally made for the first short break , I make this out of a ready to make packet because I feel its easier on my time and the final product is just yummy....soft and silky smooth..

JAM AND PEANUT BUTTER SANDWICH WITH VEGETABLE ROLL OR WRAP
In the above picture you will see both the tiffin boxes for the day one is a PBJ sandwich and the other is any dry vegetable rolled in a wheat flour roti for the convenience of eating it like a finger food...HERE I DON'T HAVE TO MAKE ONE OF THE LUNCH BOXES SO CAN CONCENTRATE ON MAKING A NICE AND HEALTHY VEGE FOR THE WRAPS...

ONION UTTAPPAM WITH SOUTHINDIAN RED POWDERED CHUTNEY

I feel contented when I  make variety of dosas or uttappams for his lunch box as according to me they make a complete meal with the required carbs and protein combination.
